Just wanted to suggest that you might want to try using the corn syrup as the recipe calls for (rather than more milk) to help with the crystallization issue. The glucose from the corn syrup prevents the sucrose molecules from recrystallizing (that's why corn syrup is often called for in sugar recipes like caramel, etc). Anyway, might be worth a shot if you're worried about it.
