I tracked down the woman who owned the blog on facebook and she was sweet enough to send it to me!<br />

Mix in the nuts and the vanilla and stir. Line a <span style="color: #ea9999; font-size: large;">storage container</span> with your candy cups. This will help when you move them into the refrigerator. If you fill the paper cups and then try to move them into the storage container, you will spill them. Take it from me. Using a small spoon, fill the candy cups.</div>

Refrigerate for a few hours or freeze for about an hour. Remove from the molds and eat up. They taste great and everyone in my house loves them. Here are what mine looked like when I took them from the silicone molds. The paper molded fat bombs are also below. </div>

One word of warning. These will melt if you don't keep them refrigerated. Coconut oil melts at 70 degrees F. So don't plan to take these on a hike or in your lunch on a warm day... without some sort of ice pack. Enjoy!</div>

I searched and searched for a recipe that I could make that used mostly stuff that I had in my house at the time. {Do you you this? Or am I the only one???} I finally found one that used two things that I had at my house... whipping cream and buttermilk. I really wanted to get rid of the buttermilk. It has been sticking around for quite a while. I found <a href="https://www.pinterest.com/pin/23362491788410528/" target="_blank">THIS recipe</a> on Pinterest. I made the recipe cutting one tablespoon of the ginger like was suggested. It tasted great before I baked it, so I knew it was going to be good.<br />

Then I used my favorite cream cheese recipe. <a href="https://www.pinterest.com/pin/30047522489921283/" target="_blank">Which is HERE</a>.<br />

I decided to try and make it look all funky like<a href="https://www.pinterest.com/pin/218424650654746843/" target="_blank"> this awesome cake</a>. So, I went and bought some teensy-tiny apples and looked up a recipe for caramel for caramel apples. I found <a href="https://www.pinterest.com/pin/396739048394454083/" target="_blank">Martha Stewart's recipe</a> {naturally} and made it using the whipping cream I had in my fridge. <br />

Seriously, Peeps... this was such an impressive cake. I'd suggest you make it. I started it around 9AM and finished it... cooled in the freezer before adding the caramel...sticks collected and all....finished by noon! Not too bad.<br />

Hi, Friends! I had to much <span style="font-size: x-large;"><span style="color: #ea9999;">f</span><span style="color: #ffd966;">u</span><span style="color: #6fa8dc;">n</span></span><span style="color: #6fa8dc;"> </span>playing with cookies this week. I usually have some sort of deadline by which I must get cookies done, but I made a batch just to play with and to try different techniques on. It was much more relaxing and fun. I had extra icing from my Easter <span style="font-size: x-large;"><span style="color: #f6b26b;">c</span><span style="color: #8e7cc3;">o</span><span style="color: #c27ba0;">o</span><span style="color: #93c47d;">k</span><span style="color: #76a5af;">i</span><span style="color: #e06666;">e</span><span style="color: #e69138;">s</span></span> {pics to come!} and fondant from a cake I made for the Robotics Club {pics also to come!} So, I just whipped up half a batch of dough and started playing. I had wanted to try using food coloring gels along with vodka to thin it for painting. You can see I had a blast. You should definitely give it a try. The good thing is... painting on cookies is stress free for the most part. If you make a mistake, you can wipe it off with a paper towel and some vodka or a Q-Tip and some vodka. And cookies aren't taken as seriously as a painting. You can just eat it if you don't like it and you can add some polyurethane and keep them forever if you love it.</div>

So, I tried to create that look by layering the food coloring to mimic watercolor.</div>

You can see in this first set of cookies that there are a lot of colors layered on top of each other.</div>

I wanted these cookies to have a <span style="color: #ea9999; font-size: large;">shabby</span> <span style="color: #93c47d; font-size: large;">chic</span> feel to them. The flowers in the corners are made with fondant and a mold. I painted over them a bit with tan to take away the bubblegum pink and stark white.</div>

For the following cookie, I used a rubber stamp which had never been used with ink. I'm not going to lie to you. This technique is really hard to do and a bit <span style="color: #a64d79; font-size: large;">frustrating</span>. You have to have a perfectly flat cookie, the black food coloring has to go onto the stamp just right and you have to press it onto the cookie just right or you get a big mess. I tried several stamps today and many of them resulted in cookies for the kids to eat. It is fun when it works though. I let the black food coloring dry and then painted the stamped image. It is pretty and very delicate looking. Worth a try, I think. If your image has small parts that didn't show up, you can take a fine paint brush and fix the lines.</div>

The following cookie is completely hand painted but let me tell you about the scalloped edges. I used two different sizes of cookie cutters. A 4-inch scalloped edge circle for the cookie and a 3.5-inch scalloped circle for rolled fondant. The fondant is my favorite canvas of the day! I made the fondant using a recipe I found on Pinterest. <a href="http://littledelightscakes.com/how-to-make-fondant-2/" target="_blank">This is the link</a> if you'd like to make it. It was super easy to make and handled nicely. You can keep it for a really long time too, so you can use it on many projects. </div>

This butterfly below was done using stamps as well. The stamps are a good way to get a basic shape down so that you can hand paint it. This one is stamped onto fondant.<br />

For the <span style="color: #6fa8dc; font-size: x-large;">butterfly</span> below, I sprinkled the fondant with color using my brush and flicking color onto it. I hand painted the bird but the swirls are stamped. You can see that the swirls aren't perfect, but I like them like that. They actually look more like they are water-colored this way. My suggesting is to stamp first and then paint because if the stamps don't turn out to your liking, you won't waste your time hand painting.<br />

This is the same technique of hand painting and stamping but this one is on icing as the background. I iced the cookie first and let it dry for a couple of hours before painting. If you are wondering why you use vodka, it is because water would make the icing sticky and melt it. Vodka, as I understand it, evaporates. There is no alcohol flavor left when it is dry, but from what I understand you can also use a lemon extract because it also evaporates.... if you prefer to not use alcohol. On the other hand, if you would like something that evaporates even better, you can use Ever Clear which is like 98 proof. It evaporates very well, but I don't even think you can buy it in my state.<br />

For this butterfly, I wanted another shabby chic feel, so I stamped a cookie that didn't have perfect icing. It was a bit bumpy because the cookie under it was bumpy. (Not sure why that happened when I baked it!) I stamped it with a postcard stamp and then painted around the edges with a bit of black and brown.<br />

This was one of my favorite techniques. And I made it up myself. The surface is black fondant which I wanted to paint so that it looked like chalk. I used white food coloring (Wilton) and it wasn't turning out like I wanted, so I rubbed a really small amount of Crisco onto the surface. This made the food coloring look just like chalk! I wasn't sure if it would dry either, but it did!<br />

This one is messy, but I still had fun making it. I would do another one like this if I had more black fondant. I may even do a whole chalkboard set eventually. I used a stamp for the words. They turned out really badly, so I painted over them. There was enough outline to make it work. <br />

I love the way the next one turned out. Interestingly, the little screws look really smudgy in the picture, but they don't in real life. Hmmm...It may be because they were still wet when I took these and the light may have hit the liquid and showed it. Oh well, you get the idea.<br />

This final one was painted to look like a watercolor on icing. I used a picture that I had found on Pinterest as inspiration. If you give this a try, go to Google images or Pinterest and search for watercolor paintings and start painting. You can find special food-safe brushes and the Wilton food coloring gels at any Walmart, Michaels or Joann's Fabrics. <br />

Hi, Friends! This has been a long weekend of play costumes and cookie making. I wanted to get some cookies made for the cast of the musical at the middle school. They are performing Beauty and the Beast Jr. Those kids put in so much hard work! Anyway, I thought I'd post them here so you can use them for ideas. The rose under glass is made using the Wilton tombstone cookie cutter (link below). <br />

I used the Wilton<a href="http://www.wilton.com/technique/Roses" target="_blank"> recipe for Royal Icing</a> for the roses themselves. It has to be a very stiff icing or the roses just turn into a pile of mush. If that happens while you are trying to make them, squish the icing back out into the bowl, and add about one extra tsp of meringue powder to it until it is hard enough to pipe the roses. I did that twice! It is a trial and error kind of thing. The link will take you to both the recipe and the technique for making roses. The roses are all dusted with a sprinkling of edible glitter as well. The link for the glitter dust is below.<br />

It has been a long time since I posted about something that I made. I usually post things that excite me and recently, I haven't felt compelled to share with you anything. Today, however, I have found a recipe that <span style="color: #ea9999;">REALLY</span> is <span style="color: #6fa8dc;">THAT </span>good. <br />

Oh my.... this coconut sorbet will knock your socks off. I used a recipe that didn't call for chunkiness in the final product, but I think that is a mistake. The end product of this recipe is smooth, creamy with chunks of delicious fresh coconut that has been toasted perfectly. You really must give it a try if you love coconut. I also made Salted Coconut Sauce for on it, but to be honest, it doesn't need it. If you want to make the sauce, it is delicious too, but save it for something like chocolate ice cream or over a crepe or something. This sorbet really doesn't need anything extra.<br />
<br />
You may think that using a whole coconut and preparing it is a lot of work, but in the end is it SO worth it. If you just don't have time for that, you can always use flaked, unsweetened coconut.<br />

<span style="font-size: large;">Toasted Coconut Sorbet</span> {1 Quart}<br />
2 cans coconut milk, well shaken! (I used one full-fat and one low-fat)<br />
2 cups grated fresh coconut<br />
1 cup sugar<br />
dash salt<br />

Prepare the coconut by<a href="https://www.youtube.com/watch?v=n2UyVEm4Osg" target="_blank"> following the directions in this video</a>. Once you have the meat out of the coconut, grate it using a box grater. <br />
1) In a small pot, combine the coconut milk, flaked coconut and sugar with the dash of salt.<br />
2) Bring to a simmer over medium-low heat and stir for about 2 minutes or until the sugar has dissolved.<br />
3) Take the pot off of the heat and let sit until it has cooled.<br />
4) Strain the mixture into a bowl, pressing all of the liquid out of the flaked coconut.<br />
6) Refrigerate the coconut sorbet base until cold.<br />
5) Preheat your oven to 400 and put the flaked coconut on a cookie sheet. Toast the coconut until light brown and fragrant approximately 10-15 minutes. Cool.<br />
7) Freeze the coconut sorbet in an ice cream freezer according to manufacturers directions, or even just place in a large bowl and put straight into the freezer, stirring every half hour or so until it is the texture of soft serve. <br />
8) After it is at the soft serve stage, add some of the cooled toasted coconut (and mini chocolate chips if you like... or almonds.... which are all not necessary, but a great addition) Save the extra coconut for garnish.<br />
7) Let freeze until it is hard enough to scoop, and when ready to eat scoop and serve!<br />

1 cup white sugar</div>

1 cup Cream of Coconut (I found this in the mixed drink mixers section of the grocery store)</div>

Put all ingredients in a medium saucepan and bring to a simmer over medium heat for about 7 minutes or until the sugar has dissolved. Use warm or chill and then warm it a bit in the microwave.</div>

Crumble Topping</h4>
1/2 cup cookies crumbled (I used GirlScout Cookies: Trefoils but you can use any cookie)<br />
1/4 cup melted butter<br />
1/4 cup brown sugar<br />
1/4 cup Heath English Toffee Bits O Brickle Toffee Bits (sold with chocolate chips)<br />
2 Tbsp flour<br />
6 oz chocolate chips<br />
2 Tbsp milk (if needed)<br />

2 cups all-purpose flour<br />
1/2 teaspoon salt<br />
1/2 teaspoon baking soda<br />
1 1/2 teaspoons baking powder<br />
1 cup ripe mashed banana <br />
2 large eggs<br />
1/4 cup vegetable oil<br />
1/3 cup granulated sugar<br />
1/3 cup brown sugar<br />
2 tablespoons milk<br />
2/3 cup sour cream<br />
1 teaspoon vanilla extract<br />
1 cup mini semi-sweet chocolate chips</div>

Preheat oven to 425 degrees F and Oil the top of the muffin pan so the muffin tops release more easily. Then line the muffin cups with paper liners or grease them well. <br />
In a medium bowl, mix the flour, salt, baking powder and baking soda together. <br />
In a mixer bowl, use the paddle attachment to mash the bananas until no lumps exist. Add the eggs and then mix in the remaining ingredients one by one, including the chocolate chips<br />
Add the dry ingredients but do no over mix. Only mix for approximately 1-2 minutes. Use your spatula to scrape the bowl and give a final mix before filling the cups.<br />
Fill muffin cups to completely full. They will rise to spill over the top and create a muffin top. .<br />
Bake for 8 minutes and then reduce the temperature to 350 and add the crumble (recipe above) and continue baking for another 6-10 minutes or until a toothpick inserted in the middle comes out clean. <br />
Let the muffins sit in the pans for a few minutes before removing them to wire racks to cool. </div>

He loves them! I am putting these on my blog so you can use the ideas if you'd like. If you would like to make your own, you can go to Sweetopia and get her great recipe for royal icing! It is really great, although, I have found that using the 10 second rule she uses makes the icing a little too tight for the fine details I create on these cookies. I add a little more water and use a 5 second rule. It just works better for the tiny tips I use.

The food is so good. I can't say enough about how impressed I was with this place. Organic, farm to table and fresh! The name of the place is La Boca Farms and this seasonal restaurant was just opened weeks ago by the woman in white on the bottom right corner. They are only open on Sunday mornings for breakfast and lunch and only for another 5 weeks. After that they take off for the South West for the winter. Nice! Upstate winters can be harsh! If this place was open for coffee every morning, I would swing by before taking the kids to school and get a cup to go!</span></span><br />

They have done such a nice job with the place. The only issue.... they are only open for 5 more Sundays. They do breakfast and lunch on Sundays only for now. 9:00-2:00. (Maybe it is 8:00-2:00). I never have been.... I blame that on the many box mixes I have had in the past. This recipe may have changed my mind about that old Southern classic that we northerners have misunderstood. <br />

I like that it is made with actual cornmeal and flour and sugar and Greek yogurt and fresh corn. I think this is the recipe I have been looking for. Perhaps you, as a Southerner, will look at this recipe and tell me I am still misunderstanding, but this was WAY better than anything I have had thus far. It was moist and hearty and had a lot of texture due to the fresh corn kernels. <br />

Being a foodie makes keeping weight off hard. I workout most days of the week so that I can eat whatever I like (within reason). But what about those weeks when I'm not feeling well, or days when my kids are home and have too many places to go for me to fit in my workout? I'm wondering if anyone has tried diet meal plan sites that provide full diet meals (like <a href="http://diettogo.com/" target="_blank">DietToGo</a>). It seems like a convenient way to have meals in the freezer for those days when you just can't make it work.<br />
<br />
Or am I better off just making up freezer meals with leftovers? That is something I will have to remember to DO though. LOL! Those sites seem like a good idea for people who don't really cook or live on their own and need no other groceries, but do they work for a person with a family? What do you feed everyone else? If you've tried them, please let me know how they worked for you and if they are worth the added $$$$.<br />

<strong>Soft Pretzels</strong><br />
<ul>
<li class="ingredient">1 1/2 cups warm (110 to 115 degrees F) water</li>
<li class="ingredient">1 tablespoon brown sugar</li>
<li class="ingredient">2 teaspoons kosher salt</li>
<li class="ingredient">2 tablespoons active dry yeast</li>
<li class="ingredient">2 cups all-purpose flour</li>
<li class="ingredient">2 1/2 cups whole wheat flour</li>
<li class="ingredient">2 ounces unsalted butter, melted</li>
<li class="ingredient">Vegetable oil, for pan</li>
<li class="ingredient">3-4 cups water</li>
<li class="ingredient">3 Tbsp baking soda</li>
<li class="ingredient">1 large egg yolk beaten with 1 tablespoon water</li>
<li class="ingredient">Pretzel salt or French grey sea salt</li>
</ul>
<span style="text-decoration: underline;">Directions</span><br />
1. Combine the water, sugar and kosher salt in the bowl of a stand mixer and sprinkle the yeast on top. Allow to sit for 5 minutes or until the mixture begins to foam. Add the flours and butter and, using the dough hook attachment, mix on low speed until well combined. Change to medium speed and knead until the dough is smooth and pulls away from the side of the bowl, approximately 4 to 5 minutes. Remove the dough from the bowl, cover with plastic wrap and sit in a warm place for 5 minutes- 10 minutes or until the dough has doubled in size.<br />

2. Preheat the oven to 450 degrees F. Line 2 half-sheet pans with parchment paper or Silpat. Set aside.<br />

3. Heat 3 cups of water to very warm in an 8-quart saucepan and add the baking soda. Turn off the heat.<br />
<br />
4. In the meantime, turn the dough out onto a slightly oiled work surface and divide into 8-16 pieces depending how large you'd like your pretzels to be. Dip the rope into the soda water holding onto the ends of the rope as handles. (It doesn't matter if the tips of the ends don't get submersed). Make a U-shape with the rope, holding the ends of the rope, cross them over each other and press onto the bottom of the U in order to form the shape of a pretzel. Place onto the parchment-lined half sheet pan.<br />

5. Coat with egg yolk and sprinkle with sea salt. Bake at 450 for 8-12 minutes or until deep brown.<br />

I have been using the Reynold's Stay Brite cupcake papers. They are AWESOME! They are lined with aluminum foil type of stuff and they actually really keep their cuteness after they are baked. The paper ones always soak through and lose their prettiness after they are baked. <br />

Oh yummy... This soup was soooo good! Tonight's dinner recipe came from an old Food Network magazine (Nov 2010). I was browsing it while waiting to pick up my son from school and found this recipe, so I went to the store after fetched my son and bought the stuff to make it straight away! It looks a little strange in the photo because I used glass noodles (or bean threads) and it was dark out by the time I took the photo, so I had to use my flash. Not great photography, but great flavor!<br />

The recipe used rice noodles, which are good too and I know this because I had a few rice noodles and used them in my son's soup (which I made less spicy). <br />
<br />
This was so easy and fast that it made a perfect weeknight meal. <br />
<br />
<span style="color: red;"><strong>Thai Chicken Soup</strong></span><br />
30 minutes: Serves 4<br />
<br />
1 Tbsp vegetable oil<br />
1 onion, thinly sliced<br />
2 cloves garlic, minced<br />
2 Tbsp green curry paste<br />
6 c low-sodium chicken broth (I used Better Than Bouillon, not low-sodium)<br />
1 15-oz can coconut milk (I used low-fat)<br />
1 Tbsp fish sauce, plus more to taste (because I used a full-sodium broth, I used just 1 Tbsp)<br />
2 red bell peppers, thinly sliced<br />
4 ounces thin rice noodles, broken into pieces (I used bean threads)<br />
2 small skinless, boneless chicken breasts (about 1 lb), very thinly sliced crosswise<br />
1 Tbsp fresh lime juice, plus more to taste<br />
1 c roughly chopped fresh cilantro<br />
my additions: 2 c fresh green beans cut into bite-sized pieces<br />
1 dried Thai chili (more or less depending on how hot you like it)<br />
<br />
1. Heat the vegetable oil in a large pot over medium-hight heat. Add the onion and cook, stirring occasionally, until softened and lightly browned, about 8 minutes. Add the garlic and curry paste and cook, stirring, 1 to 2 minutes. Add the chicken broth, coconut milk and fish sauce; cover and bring to a boil.<br />
<br />
2. Add the bell peppers and noodles and simmer, uncovered, until the noodles are al dente, about 3 minutes. Add the chicken and simmer until just cooked through, about 3 more minutes. Stir in the lime juice and cilantro. Add more fish sauce and lime juice if desired.<br />
