Healthy Breakfast Crepes

This morning I looked for a healthy whole-wheat crepe recipe and hit the jackpot with the first try.  With just a small amount of flour, 2 tbsp. of butter, 3 eggs and milk, you get a lot of lovely, tasty crepes!   I made 9 using a 7-inch non-stick pan.

The fillings are where you can get into trouble, but I filled some with Chobani's 0% Raspberry Greek Yogurt, some Reddiwip spray whipped cream and topped it with more (for good measure) and fresh blackberries.  It really was delicious.  My husband doesn't like yogurt, so we filled his with applesauce and whipped cream.  He loved it.
