Pecan Fat Bombs

What a bad name, hu? Sounds terrible. I'm not sure who decided that calling these little bites of delicious healthy oils, "fat bombs," was a good idea. Dude... not a good idea. Interestingly however....I can't think of a better name. And since everyone in Internetlandia knows what I'm talking about...I will go with it.

 Following is the very simple recipe for fat bombs. What you will need are:

 1/2 c Extra-virgin coconut oil (preferably organic)

1/2 c Peanut butter or any nut butter you prefer.  I used a freshly ground natural peanut butter.

1/2 c of pecans 

1/2 c chopped almonds (or... whichever nuts you prefer)

1/4 tsp vanilla

 Paper candy cups or silicone candy cups

Instructions: In a pourable liquid measuring cup, melt together the nut butter and the coconut oil using a low setting on your microwave for about 1 minute. It will look like this.

Not pretty.  BUT stir for a few minutes until the oil and nut butter mix together.


Mix in the nuts and the vanilla and stir.  Line a storage container with your candy cups.  This will help when you move them into the refrigerator.  If you fill the paper cups and then try to move them into the storage container, you will spill them.  Take it from me.  Using a small spoon, fill the candy cups.

Refrigerate for a few hours or freeze for about an hour. Remove from the molds and eat up.  They taste great and everyone in my house loves them.  Here are what mine looked like when I took them from the silicone molds.  The paper molded fat bombs are also below.  

One word of warning.  These will melt if you don't keep them refrigerated.  Coconut oil melts at 70 degrees F.  So don't plan to take these on a hike or in your lunch on a warm day... without some sort of ice pack.  Enjoy!

These little bombs are filled with nutty goodness and the fat you need for your Keto diet.  So, let's look at the breakdown.  I made mine with almonds and pecans and entered the recipe into MyFitnessPal.  Here are the results.

Freebie Cupcake Wrappers for Easter and Art Party

Spring is almost here, so I've made an Easter set of cupcake wrappers for you!  Enjoy! Just right click to print and cut out.  Below I've also made a set for your art and painting party needs.  I love going to paint nights at our local art shop and thought it would be fun to take cupcakes for my class mates.  

I made THIS yummy Death by Chocolate cupcake for my guys today.  OMG... it is so yummy.  This was my son's request, but next time I think I would make a pretty white cupcake to go with the pastel colors on the Easter papers.
