Following is the very simple recipe for fat bombs. What you will need are:
1/2 c Extra-virgin coconut oil (preferably organic)
1/2 c Peanut butter or any nut butter you prefer. I used a freshly ground natural peanut butter.
1/2 c of pecans
1/2 c chopped almonds (or... whichever nuts you prefer)
1/4 tsp vanilla
Instructions: In a pourable liquid measuring cup, melt together the nut butter and the coconut oil using a low setting on your microwave for about 1 minute. It will look like this.
Not pretty. BUT stir for a few minutes until the oil and nut butter mix together.
Prettier!
Mix in the nuts and the vanilla and stir. Line a storage container with your candy cups. This will help when you move them into the refrigerator. If you fill the paper cups and then try to move them into the storage container, you will spill them. Take it from me. Using a small spoon, fill the candy cups.
Refrigerate for a few hours or freeze for about an hour. Remove from the molds and eat up. They taste great and everyone in my house loves them. Here are what mine looked like when I took them from the silicone molds. The paper molded fat bombs are also below.
One word of warning. These will melt if you don't keep them refrigerated. Coconut oil melts at 70 degrees F. So don't plan to take these on a hike or in your lunch on a warm day... without some sort of ice pack. Enjoy!
